Peanut Butter Banana Granola

I have to ask – why in God’s name is granola so expensive? Whenever I see a small bag of granola for $7 I’m dumbfounded.  The ingredients aren’t terribly expensive and it’s pretty easy to make.  I guess it’s one of life’s little mysteries.  Until I figure it out, I’m just going to keep making my own.

One of my favorite flavor combos is peanut butter and banana.  I guess Elvis and I have a lot in common beyond our shared affection for sparkly jumpsuits, hound dogs and hip shakin’ music.  Although his favorite sandwich is no doubt delicious, this recipe is quite a bit healthier, and still pretty tasty.

Peanut Butter Banana Granola

Ingredients
2 cups of oats
1/2 banana (mashed very well)
2 heaping tbsp. unsweetened all-natural peanut butter
2 tbs. honey
1 tbsp. brown sugar

1.) Pre-heat the oven to 300*
2.) Combine the mashed banana, peanut butter, honey and brown sugar.
3.) Fold in oats
4.) Pour on to a baking sheet. Spread the oat mixture into a somewhat flat layer, keeping some chunks.
5.) Bake for 15 minutes. Stir the mixture and bake for another 10-15 minutes. Make sure to keep you eye on it because it can burn very easily.

I bet it would also be mighty tasty mixed with some dried bananas or other dried fruit.

Salt = sodium = bad. Sweet = calories = bad. Well, isn't that just a bleak outlook. I firmly believe that without salt and without sweet we all just live in a world of lettuce. Plain lettuce. Fun? Statement necklace layered over said tank - now we're talking! I live in Portland, Maine. I love cooking, eating out, riding my bike and approachable fashion. This blog does not chronicle my every waking moment. This is because you will probably not be entertained by the 10th day in a row that I eat the exact same salad for lunch. It does chronicle a healthy, active, fun-filled, colorful lifestyle, in Portland and beyond. It also covers dogs. Cute ones mostly.

    OMG I definitely have to try this! I love granola! Though I’m not a huge fan of peanut butter mixed with bananas. Do you think it would work if I left the banana out?

    This is really interesting. I’ve never thought of baking the banana into the granola before. Unfortunately I can’t have peanut butter so I’m SOL there. This seems like more of a soft granola to snack on than a hard granola you have with milk. maybe?

      Ah the dreaded peanut allergy, my brother is allergic too. Worked out for me on Halloween when I would get all his Reeses though!

      This granola is actually pretty crunchy, reminds me of the Bare Naked brand banana. It’s nice and clumpy though, which I like.
