We are curry-a-holics in my house. We are also peanut butter-a-holics and Thai-a-holics, therefore this recipe is a no brainer. I basically make something like this almost every week in some form or another. Sometimes there’s chili garlic paste, often times no coconut milk, many times I use Chinese 5 spice powder instead of curry. In any case, a good “Asian-style” sauce is crucial to the survival of Ross and I. We would most certainly perish without our peanut noodles.
This time around I served up our delightfully yummy and easy sauce with some lomein noodles we had kicking around, chicken and bok choy. It is also perfect with brown rice, rice noodles or just about anything your little heart desires. Even pizza. Yes, that’s correct – Thai peanut pizza. Delicious. Don’t knock it till you try it.
Coconut Curry Peanut Sauce
Makes enough for two portions
1/2 cup light, un-sweetened coconut milk
1 tbsp. peanut butter (I use all natural, un-sweetened)
2 tsp. curry
1 tsp. fish sauce
1 tsp. soy sauce
1.) Combine all ingredients in a small pot.
2.) Set to medium heat and cook down until thickened.
3.) Top whatever you please!
